Baked Sweet potatoes with Maple- Jalapeno Sour Cream

Ingredients

  • 4 sweet potatoes, scrubbed, dried
  • oil and salt (to rub potatoes)
  • For the Topping:
  • 1/2 cup sour cream or plain yogurt
  • 1 Tbsp. pure maple syrup2 tsp. jalapeno, seeded, minced
  • 1 tsp. fresh lime juice
  • salt and Tabasco to taste
  • Maple-jalapeno Sour Cream
  • Bacon bits
  • Sliced scallions

Directions

  1. preheat oven to 3450 degrees with rack positioned in the center. Rub scrubbed, dried sweet potatoes with oil and salt.

  2. Bake directly o rack for 40 to 45 minutes, or until soft when pierced.

  3. Combine all topping ingredients; chill until ready to serve. Serve potatoes with Maple-jalapeno

  4. Sour cream, bacon bits, and scallops.
