Baked Yams with Candied Apples and Cranberries

Ingredients

  • 1 large (about 1/2 lb.) Golden Delicious apple, peeled, cored and diced
  • 3 cups (12 oz. bag) fresh or frozen cranberries
  • 3/4 cup firmly packed brown sugar
  • 3/4 cup coarsely chopped pecans
  • 1/2 cup orange juice
  • 1/2 cup orange-flavor liqueur (or 1/4 cup orange juice)
  • 3/4 tsp. ground cinnamon
  • 1/8 tsp. ground nutmeg
  • 3 medium-size (about 2 lb. total) yams or sweet potatoes

Directions

  1. In a large bowl, combine apple, cranberries, sugar, orange juice, orange liqueur, cinnamon, and nutmeg. Set aside.

  2. Peel yams, cut into about 1/2-inch cubes. Spread cubes out in a buttered, shallow 2 1/2 to 3-quart (9 × 13-inch over or rectangular) baking dish. Spoon apple-cranberry mixture evenly over the yams.

  3. Cover the dish tightly with foil. Bake in a 400 degree oven for 45 minutes. Remove cover and continue baking until yams are tender when pierced, and liquid in bottom of dish has almost evaporated, 35 to 45 minutes longer.
