Balsamic Beans

Ingredients

  • 3 cups fresh green beans
  • 1 Tbsp. olive oil
  • 1/2 cup balsamic vinegar
  • 1/2 cup red onion, chopped
  • 1/2 cup yellow pepper, julienned
  • 1 clove garlic, minced
  • 2 tsp. fresh dill
  • 1 Tbsp. parsley
  • 1/4 cup pine nuts, toasted
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Directions

  1. Simmer green beans for 30 to 45 minutes just to soften.

  2. Make dressing from oil, vinegar and herbs.

  3. Add remaining vegetables to beans and top with dressing. Top with toasted pine nuts. Chill.
