Banana Bake

Ingredients

  • 4 ripe, firm bananas
  • 1 Tbsp. butter
  • 4 Tbsp. dark brown sugar
  • 2 Tbsp. fresh lime juice
  • 1 tsp. grated lime zest
  • 2 Tbsp. rum
  • 1/4 cup unsweetened coconut flakes, toasted
  • Frozen vanilla non-fat yogurt (optional)

Directions

  1. Peel bananas and split inn half lengthwise.

  2. Spray a glass casserole with non-stick spray.

  3. Lay the banana halves, cut side down, in the dish. Do not overlap.

  4. In a small saucepan, combine butter, sugar, juice, zest and rum. Simmer until sugar dissolves. Pour sauce over bananas.

  5. Bake at 350 degrees for 15 minutes. Garnish with coconut and serve with frozen yogurt, if desired.
