Quick Pickled Red Onion

Ingredients

  • 1/2 cup water
  • 1/4 cup apple cider vinegar
  • 2 tsp. brown sugar
  • 1 tsp. whole black peppercorns
  • 3/4 tsp. kosher salt
  • 1/2 tsp. mustard seed
  • 1 star anise
  • 1 garlic clove
  • 1 cup thinly sliced red onion
  • 1 fresh dill front

Directions

  1. Combine water, vinegar, sugar, pepper, salt, mustard seed, star anise and garlic in a small saucepan; bring to a simmer. Pour vinegar mixture over red onion and dill in a clean, heatproof jar. Cool. Cover and chill at least 1 hour or up to 2 weeks.
