Banana- Berry Supreme

Ingredients

  • 1 egg, beaten
  • 1 cup milk
  • 2 Tbsp. sugar
  • 1/8 tsp. vanilla extract
  • 1 large banana, sliced
  • 3/4 cup quartered strawberries
  • 1 egg white
  • 1/8 tsp. salt
  • 2 Tbsp. sugar

Directions

  1. Combine egg and milk in top of a double boiler. Combine 2 Tbsp. sugar and cornstarch; stir into egg mixture. Cook over simmering water until mixture thickens, stirring constantly. Remove from heat; stir in vanilla. Cover and chill.

  2. Divide banana slices and quartered strawberries evenly into two 10 oz. ovenproof dessert cups. Spoon custard over fruit.

  3. Beat egg white (at room temperature) until foamy; add salt and continue beating until soft peaks form. Gradually add 2 Tbsp. sugar, beating until stiff peaks form. Spoon meringue into a ring over custards.

  4. Bake at 425 degrees for 3 minutes or until the meringue is lightly browned. Chill before serving.
