Banana Cake with Peanut Butter Frosting

Ingredients

  • For the cake:
  • 1/2 cup butter
  • 1 1/2 cups granulated sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 3/4 cup sour cream or buttermilk
  • 2 cups all-purpose flour
  • 1 tsp. baking soda
  • 1 cup mashed ripe bananas
  • 1 cup chopped nuts
  • For Frosting:
  • 2 Tbsp. butter
  • 1/4 cup hot water
  • 2 cups confectioners' sugar
  • 1/4 cup peanut butter
  • 1 tsp. vanilla extract

Directions

  1. Heat oven to 350 degrees. Grease an 8-inch square pan.

  2. Cream the butter and sugar, add eggs, one at a time; beat in vanilla and sour cream or buttermilk. Combine the flour and baking soda with a whisk and add to the batter. Fold in the bananas and nuts. Pour into prepared pan. Bake 45 to 50 minutes. Cool completely.

  3. In a saucepan, combine the butter and hot water and bring to a boil. Remove from heat and add the sugar, peanut butter and vanilla. Beat until smooth and creamy. Spread immediately on cooled cake.
