Banana-Chip Oat Muffins

Ingredients

  • 1 cup quick-cooking oats
  • 3/4 cup all-purpose flour
  • 3/4 cup whole wheat flour
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/8 tsp. salt
  • 2 Tbsp. butter, softened
  • 1/2 cup packed brown sugar
  • 3 medium ripe bananas, mashed
  • 1 egg
  • 2 Tbsp. unsweetened applesauce
  • 1 tsp. vanilla extract
  • 3/4 cup miniature semisweet chocolate chips

Directions

  1. In a large bowl, combine the dry ingredients in a small mixing bowl.

  2. In another small bowl beat butter and brown sugar until crumbly. Beat in the bananas, egg, applesauce and vanilla. Stir into dry ingredients just until moistened. Fold in chocolate chips.

  3. Coat muffin cups with nonstick cooking spray or line with paper liners; fill 3/4 full.

  4. Bake at 350 degrees for 15 to 20 minutes or until a toothpick inserted near center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.
