Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp. salt
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 2 to 4 ripe bananas
  • 2 large eggs
  • 1/2 cup granulates sugar
  • 1/2 cup packed brown sugar
  • 1 tsp. vanilla extract
  • 1/2 cup vegetable oil or melted butter
  • 1 to 1 1/2 cups semisweet chocolate chips

Directions

  1. Heat oven to 350 degrees. Grease a loaf pan (or 9 × 13-inch pan) and line the bottom with parchment paper.

  2. Mix the flour, salt, baking powder and baking soda.

  3. In a separate bowl, mash bananas, leaving some texture. You should have 2 cups.

  4. Add the eggs, sugars, vanilla and oil or butter to the bananas, and beat until thick.

  5. Fold in the flour mixture- gently lift the batter from the bottom of the bowl and fold it over to mix. Still just until blended. Add chocolate chips.

  6. Pour the batter into the pan. Bake the loaf pan for 1 hour (the 9 × 13 inch pan will only take 25 to 30 minutes), until the loaf has risen and a knife or skewer inserted in the middle comes out clean. Cool in pan 15 minutes, then run a knife along the edges and pop the bread out onto a plate or cooling rack.
