Banana- Date Bread

Ingredients

  • 2/3 cup solid all-vegetable shortening
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cups mashed ripe bananas (4 to 5 medium)
  • 1 Tbsp. lemon juice
  • 2 cups sifted all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/2 cup chopped pitted dates, mixed with 1 Tbsp. flour

Directions

  1. Preheat oven to 325 degrees. Grease and flour a 9 × 5 × 3-inch loaf pan.

  2. In a large bowl beat together shortening and sugar until light and fluffy.

  3. Beat in eggs one at a time, beating well after each addition. Blend in bananas and lemon juice.

  4. Stir together flour, baking soda and salt. Blend into banana mixture; stir in dates.

  5. Turn batter into prepared pan and bake for 1 hour and 25 to 30 minutes, or until a cake tester inserted in center comes out clean.

  6. Let cool 10 minutes in pan, then remove from pan and let cool completely on wire rack.
