Banana Eggnog Bread

Ingredients

  • 1/2 cup butter, softened
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 cup mashed ripe bananas (about 2 medium)
  • 1/4 cup eggnog
  • 1 tsp. vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. ground nutmeg, divided
  • 1/4 tsp. salt
  • 1/8 tsp. baking soda

Directions

  1. Preheat oven to 350 degrees.

  2. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in bananas, eggnog, and vanilla.

  3. In another bowl, whisk flour, baking powder, 1/4 tsp. nutmeg, salt and baking soda; gradually beat into the banana mixture.

  4. Transfer to a greased 9 × 5 inch loaf pan; sprinkle with remaining nutmeg. Bake 50 to 60 minutes or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool.
