Hummus with Toasted Coriander and Feta

Ingredients

  • 15.5 oz. can chickpeas, rinsed
  • 2 tbsp. fresh lemon juice
  • 1 garlic clove, finely chopped
  • 1/3 cup olive oil, plus more for drizzling
  • 1 tsp. toasted coriander seeds, crushed
  • 1/2 cup crumbled feta
  • 1/4 cup fresh mint leaves

Directions

  1. In food processor, puree chickpeas, lemon juice and garlic. With machine running, steam in 1/3 cup oil; season. Transfer hummus to wide bowl. Top with coriander seeds, feta and mint; season. Drizzle with oil. Serve with pita chips or fresh veggies.
