Beef Piquant in Rice Ring

Ingredients

  • 1 1/2 lbs. tenderized round steak, cut in 1-inch strips
  • 2 Tbsp. chili powder
  • 2 tsp. salt
  • 1/2 tsp. garlic powder
  • 4 cups hot cooked rice
  • 1 tsp. onion powder
  • 1 cup cooked seasoned green peas
  • 2 Tbsp. chopped parsley
  • 2 Tbsp. vegetable oil
  • 1 can (8 oz.) tomato sauce

Directions

  1. Season beef strips with chili powder, salt, and garlic powder. let meat stand about 30 minutes. (this allow the meat time to absorb the flavor of the spices).

  2. Combine rice, onion powder, green peas, and parsley. Toss gently. Pack into a 1 1/2-quart ring mold. Cover and place mold in a pan of hot water until serving time. Saute steak in hot oil about 10 minutes. Add tomato sauce; cover and cook 10 minutes longer.

  3. Invert rice ring on heated platter. Fill ring with meat mixture.
