Banana Kiwi Pudding

Ingredients

  • 1 1/3 cups cooked rice
  • 1 1/3 cup skim milk
  • 1 tsp. vanilla extract
  • Low-calorie sugar substitute to equal 2 Tbsp. sugar
  • 1 ripe bananas, mashed
  • 1/4 cup whipping cream, whipped
  • 2 kiwi fruits, sliced, for garnish

Directions

  1. Cook rice and milk in 2-quart saucepan over medium heat until thick and creamy (about 15 to 20 minutes), stirring frequently. Remove from heat; cool.

  2. Stir in vanilla and sugar substitute. Just before serving, fold in banana and whipping cream. Garnish with kiwi slices.
