Banana- Brownie Sundae

Ingredients

  • Brownies:
  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa
  • 1/4 cup nonfat dry milk powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • 1 large very ripe banana
  • 1 cup sugar
  • 2 large egg whites
  • 1/4 cup buttermilk
  • 1 tsp. vanilla extract
  • Sundae:
  • 1/2 banana, peeled
  • 1 brownie
  • 1 scoop vanilla nonfat frozen dessert
  • 1 Tbsp. chocolate syrup
  • 1 maraschino cherry (optional)

Directions

  1. Brownies:

  2. Preheat oven to 350 degrees. Coat 9-inch square baking pan with vegetable cooking spray.

  3. Combine flour, cocoa, milk powder, baking soda and salt in bowl.

  4. Puree banana, sugar, egg whites, buttermilk and vanilla in food processor until smooth. Add dry ingredients and pulse just until blended.

  5. Pour into prepared pan. Bake 25 minutes or until toothpick inserted in center comes out clean. Cool on wire rack. Cut into 2-inch squares.

  6. Assemble each sundae: arrange banana half in serving dish. Place a brownie and scoop of frozen dessert in center. Top with chocolate syrup and a cherry.
