Banana Nut Bread

Ingredients

  • Nonstick cooking spray
  • 3 ripe bananas, mashed
  • 2 eggs, well beaten
  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 12 cup coarsely chopped pecans or black walnuts
  • Butter for serving

Directions

  1. Heat oven to 350 degrees. Coat 1 regular-size loaf pan, or 3 miniature loaf pans with nonstick cooking spray.

  2. In a large bowl, mix bananas and eggs together. Stir in flour, sugar, salt and baking soda. Add nuts of choice and blend.

  3. Pour batter into prepared pan (pans) and bake 1 hour for regular-size pan, 45 minutes or less for miniature pans.

  4. Remove from pan to a rack to cool. Serve warm with butter, if desired.
