Banana Bread

Ingredients

  • 1/2 cup butter or margarine
  • 1 cup sugar
  • 2eggs
  • 2 large or 3 small ripe or overripe bananas, mashed
  • 2 cups sifted all-purpose flour
  • 1 tsp. baking soda
  • 1/8 tsp. salt
  • 1/4 cup sour milk or sour cream
  • 1/2 cup chopped walnuts (optional)

Directions

  1. Beat butter, sugar and eggs in a large bowl with electric mixer 3 minutes or until light and fluffy; stir in bananas.

  2. Stir flour, soda and salt onto wax paper. Add flour mixture gradually to butter mixture; stir until well mixed. Add sour milk; stir until smooth.

  3. Pour batter into a well-greased 9 × 5 × 3-inch loaf pan. Sprinkle top with chopped walnuts.

  4. Bake in a 375 degree oven for 1 hour or until center springs back when lightly pressed with fingertip. Cool 10 minutes in pan on wire rack. Remove from pan; cool.
