Banana Orange Nutmeg Bread

Ingredients

  • 2 extra ripe, medium bananas
  • 1 cup chopped walnuts
  • 1 cup all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. soda
  • 3/4 tsp. ground nutmeg
  • 1/4 tsp. salt
  • 1/4 cup butter, softened
  • 3/4 cup sugar
  • 1 egg
  • 1/4 cup orange juice
  • 1 Tbsp. grated orange peel
  • 1 cup raisins

Directions

  1. Puree bananas in blender. Pulverize walnuts in blender; combine with flour, baking powder, soda, nutmeg, and salt. Cream butter with sugar until light and fluffy.

  2. Beat in thirds alternately with pureed bananas. Stir in raisins. Pour into greased 9 × 5 inch raisins. Pour into greased 9 × 5 inch loaf pan.

  3. Bake in 325 degree oven 1 hour and 20 minutes or until toothpick inserted comes out clean. Cool in pan 10 minutes. Turn onto wire rack to cool.
