Beef Patties in Sweet-Sour Sauce

Ingredients

  • 1 1/2 lbs. lean ground beef
  • 1 Tbsp. soy sauce
  • 1 Tbsp. minced green onion
  • 1/4 tsp. salt
  • Fresh ground pepper
  • crushed pineapple
  • Sweet-Sour Sauce:
  • 1 can (16 oz.) tomatoes
  • 1 can (14 1/2 oz.) crushed pineapple
  • 1/4 cup packed brown sugar
  • 2 Tbsp. cornstarch
  • 1/2 tsp. salt
  • 1/2 tsp. ground ginger
  • 1 Tbsp. vinegar

Directions

  1. Mix together lightly beef, soy sauce, green onion, salt, pepper and any pineapple not used in Sweet-Sour Sauce. Form into 6 thick patties. Broil to desired doneness. Serve with sauce.

  2. Sweet-Sour Sauce:

  3. Drain tomatoes, reserving 1/2 cup juice. Drain pineapple, reserving 1/4 cup syrup.

  4. Mix together in saucepan brown sugar, cornstarch salt and ginger. Add reserved juice and syrup and the vinegar, stirring constantly; lower heat and stir until mixture thickens. Coarsely chop tomatoes. Add tomatoes and 1/2 cup crushed pineapple to sauce and heat through.
