Thai Cucumber Salad

Ingredients

  • 3 large cucumbers, peeled, halved lengthwise, seeded and sliced into 1/4-inch pieces
  • 1 tbsp. kosher salt
  • 1/3 cup sugar
  • 1/3 cup rice wine vinegar
  • 2 jalapenos, seeded and chopped
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup chopped peanuts

Directions

  1. Toss cucumbers with salt in a colander and let stand 30 minutes. Rinse with cold water, drain, and dry well with paper towels.

  2. Whisk together sugar and vinegar in a bowl until sugar is dissolved. Add cucumbers, peppers and cilantro; toss to combine. Sprinkle with chopped peanuts before serving.
