Cherry Jewels

Ingredients

  • 1/2 cup (1 stick) butter, softened
  • 1/4 cup sugar
  • 1 egg yolk
  • 1 tsp. grated lemon rind
  • 1 Tbsp. orange juice
  • 1 tsp. vanilla
  • 1 1/4 cups sifted cake flour
  • 3/4 cup pecans, finely chopped
  • 18 candied cherries, halved

Directions

  1. Cream together butter and sugar; beat until light and fluffy. Add egg yolk, lemon rind, lemon juice, orange juice and vanilla; beat well. Gradually blend in flour; chill.

  2. Roll into 1-inch balls, roll in nuts and place on buttered baking sheet. Press cherry half in center.

  3. Bake at 350 degrees for 10 to 12 minutes; remove to wire rack to cool.
