Grilled Spanish Mustard Beef

Ingredients

  • 1/4 cup olive oil
  • 1/4 cup sherry vinegar
  • 4 garlic cloves, minced
  • 2 tbsp. Dijon
  • 2 tbsp. smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 lbs. flank steak

Directions

  1. Preheat an outdoor grill to medium-high heat.

  2. Whisk together oil, vinegar, garlic, mustard, paprika, salt and pepper in a large bowl. Add steak and turn to coat. Marinate at room temp, turning occasionally, 30 minutes.

  3. Lightly oil grill grate. Lift steak from marinade, letting excess drip off. Grill steak, turning once, until browned on both sides, steak begins to firm, 5-6 minutes per side. Transfer steak to a cutting board and let rest, covered loosely with foil, at least 10 minutes before slicing.

  4. Slice steak again the grain.
