Campfire Chicken Foil Packs

Ingredients

  • 4 chicken breasts, halved crosswise
  • 2 onions, thinly sliced
  • 3 carrots, thinly sliced
  • 8 oz. package sliced fresh mushrooms
  • 1 yellow bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 4 garlic cloves, sliced
  • 1/4 cup olive oil
  • 1 large lemon, juiced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme

Directions

  1. Preheat an outdoor grill or bring a campfire to medium heat.

  2. Mix together all ingredients in a large bowl or Ziploc bag, then divide among 4 large sheets of heavy-duty foil. Wrap foil around chicken mixtures and tightly crimp edges together to form packets. Wrap each packet with another sheet of foil and seal edges tightly.

  3. Grill packets, or nestle them into hot campfire embers, rotating occasionally to cook evenly, until chicken is opague and vegetables are tender, 25-30 minutes. Let rest 10 minutes before opening foil.
