Cucumber Sandwiches

Ingredients

  • 8 thick slices whole-wheat bread
  • 1/2 cup cream cheese, softened (4 oz.)
  • 1-2 cucumbers, sliced into about 24 pieces
  • 1/2 cup alfalfa sprouts
  • 4 tsp olive oil
  • 4 tsp red wine vinegar
  • 2 tomatoes, sliced
  • 4 leaves lettuce
  • 1 cup sliced pepperoncini or banana peppers
  • 2 avocados, peeled, seeded and mashed

Directions

  1. Spread about 1 tbsp. cream cheese on each bread slice. Arrange cucumbers in a single layer over 4 bread slices, cover with sprouts, and sprinkle with oil and vinegar. Layer on tomatoes, lettuce and pepperoncini. Spread avocado over cream cheese on remaining 4 bread slices. Place spread-side-down on pepperoncini and serve immediately.
