Yucatan-Style Grilled Pork

Ingredients

  • 1/2 cup orange juice
  • 6 tbsp. lemon juice
  • 3 tbsp. lime juice
  • 6 garlic cloves, minced
  • 1 tbsp. salt
  • 1 tsp. paprika
  • 1 tsp. chipotle chile powder
  • 1 tsp cumin
  • 1/2 tsp cayenne
  • 1/2 tsp dried oregano
  • 1/2 tsp black pepper
  • 2 pork tenderloins
  • 1 tbsp. vegetable oil

Directions

  1. Whisk together citrus juices, garlic, salt, paprika, chipotle powder, cumin, cayenne, oregano and black pepper in a bowl until well blended.

  2. Cut tenderloins in half crosswise, then cut each piece in half lengthwise. Add to marinade and turn to coat thoroughly. Cover with plastic wrap, pressing wrap against surface of meat, and chill 4-6 hours.

  3. Transfer pork to a small sheet pan lined with paper towels and blot pork to absorb most of the moisture. Discard paper towels. Drizzle oil and sprinkle a bit more paprika on pork.

  4. Preheat an outdoor grill to medium-high heat and lightly oil grate.

  5. Evenly space pork pieces on grate. Grill on all sides until pieces are seared, release easily from grate and are cooked through, 5-6 minutes per side. Transfer to a cutting board and let rest 5 minutes before slicing.
