Flank Steak with Rosemary Beer Butter

Ingredients

  • 6 large garlic cloves, minced
  • 3 tbsp. chopped fresh rosemary
  • 2 tbsp. olive oil
  • 1 1/2 tsp. kosher salt
  • 1/2 tbsp. black pepper
  • 2 1/4 lb. flank steak
  • 1 cup beer
  • 1/2 cup unsalted butter
  • 3 tbsp. honey
  • 2 fresh rosemary sprigs
  • Garnish: fresh rosemary

Directions

  1. In a small bowl, combine garlic, rosemary, oil, salt and pepper. Rub steak with garlic mixture. Cover and refrigerate for 2 hours.

  2. In a medium saucepan, bring beer, butter, honey and rosemary sprigs to a boil over medium-high heat. Remove from heat.

  3. Spray grill with nonflammable cooking spray. Preheat grill to medium-high heat.

  4. Grill steak with grill lid closed for 6 minutes. Turn steak, and grill, turning frequently and basting with beer butter mixture, until desired doneness, about 18 minutes. Remove from grill, and spoon 3 tbsp. beer butter mixture over steak; let stand for 5 minutes. Garnish with rosemary.
