Grilled Padron Peppers with Sherry

Ingredients

  • 1 lb. Padron peppers
  • 2 tbsp. olive oil
  • 1/2 tsp. sea salt
  • 1/2 tsp. black pepper
  • 2 tsp. Spanish sherry
  • Flaky sea salt, for garnish

Directions

  1. Build a hot fire.

  2. Toss peppers with oil, salt and pepper in a large bowl. Transfer to a grill basket.

  3. Grill the peppers, shaking the basket frequently, until sizzling and browned, 5-8 minutes.

  4. Return the pepper to the bowl. Drizzle with sherry and toss to coat. Transfer to a serving platter and sprinkle with flaky sea salt.
