Pickled Carrots and Cucumbers

Ingredients

  • 1 large carrot, shredded
  • 1/2 seedless cucumber. cut into 3-inch matchsticks
  • 1 garlic clove, halved
  • 4 dill sprigs
  • 1 cup white vinegar
  • 3/4 cup water
  • 1 tbsp. kosher salt
  • 1 tbsp. sugar

Directions

  1. Combine carrot, cucumber, garlic, and dill in a medium bowl. Bring vinegar, water, salt and sugar to a bowl, stirring, until dissolved; pour over the vegetables. Let cool. Refrigerate 2 hours.
