Vegetable Stock

Prep time: 5 minutes
Cook time: 60 minutes

Ingredients

  • 1 onion, peeled and halved
  • 3 cloves garlic, peeled
  • 1 stick celery
  • 1 carrot, washed but not chopped
  • thyme
  • bay leaf
  • 5 black peppercorns

Directions

  1. Put in a large pot

  2. Add cold water

  3. Bring to the boil slowly

  4. Simmer for one hour

  5. Strain and push any liquid out of the vegetables with the back of a spoon

  6. Drink while hot or boil down and freeze as vegetable stock
