Oven-Fried Chicken

Ingredients

  • 1 tbsp. unsalted butter
  • 2 tsp. kosher salt, divided
  • 4-5 lb. whole chicken, cut into 8 pieces
  • 1/4 cup all-purpose flour
  • 1/4 cup quick-mixing flour
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp black pepper
  • 1/8 tsp crushed red pepper
  • White Barbecue Sauce (see recipe)

Directions

  1. Preheat oven to 425. Place butter in a 13×9-inch baking dish, and place dish in oven to preheat for 10 minutes.

  2. Sprinkle 1 tsp. salt all over chicken pieces. In a shallow dish, whisk together flours, onion powder, garlic powder, all pepper and remaining 1 tsp. salt. Dredge chicken in flour mixture, shaking off excess. Carefully place chicken, skin side down, in an even layer in hot dish.

  3. Bake for 10 minutes. Turn chicken, and bake until a thermometer reads 165 and skin is golden brown and crisp, about 20 minutes more. Let stand for 5 minutes; serve with White Barbecue Sauce.
