Barbecued Oysters

Ingredients

  • Sauce:
  • 1/3 cup Crystal hot sauce or other Louisiana Hot sauce
  • 1/4 cup honey
  • 1/4 cup loosely packed dark brown sugar
  • 1 tsp. orange zest
  • 1 tsp. lemon zest
  • Coating:
  • 2 cup all-purpose flour
  • 1 tsp. salt
  • 1 tsp. freshly ground black pepper
  • 1/2 tsp. garlic powder
  • Vegetable oil for deep-frying
  • 24 shucked oysters

Directions

  1. To prepare the sauce, whisk together all of the ingredients over medium heat in a saucepan for 1 minute, or until brown sugar is dissolved and hot. Remove the sauce from heat and let cool at room temperature for at least 2 hours, or preferably overnight, to allow flavors to mingle.

  2. Reheat the sauce in a large skillet over medium heat. Heat the oil to 350 degrees. While the oil is heating, mix together all of the ingredients for the coating. Dredge the oysters in the coating, add them to the hot oil, and deep-fry until golden brown, about 2 minutes.

  3. To serve, place the oysters in a large serving bowl. Serve the sauce in a separate bowl omn the side for dipping, or lightly toss the oysters in the sauce.
