Barbecued Pigs’ Feet

Ingredients

  • 10 lb. pigs' feet
  • 4 hot green peppers
  • 4 red hot peppers
  • 3 tsp. paprika
  • 2 tsp. crushed bay leaves
  • 1/2 tsp. garlic, minced
  • 4 cups vinegar
  • 4 tsp. salt
  • 1/2 cup red wine
  • 1 (6 oz.) can tomato paste

Directions

  1. Wash and split the pigs’ feet. Cover with cold water and simmer for one hour.

  2. While pigs’ feet are cooking, make the barbecue

  3. sauce by mixing the peppers, paprika, bay leaves, garlic, vinegar, mustard, salt, wine and tomato paste.

  4. Drain pigs’ feet and arrange them in a greased casserole. Pour barbecue sauce over them and bake at 250 degrees for one hour.
