Barbecue Ribs

Ingredients

  • 15 lb. meaty pork ribs
  • 10 quarts water
  • 4 cups tomato paste
  • 4 cups tomato sauce
  • 2 cups red wine
  • 12 Tbsp. prepared mustard
  • 48 oz. vinegar
  • 1 cup (2 sticks) butter or margarine
  • 1/4 cup salt
  • 6 Tbsp. black pepper
  • 2 Tbsp. paprika
  • 1 green bell pepper, chopped
  • 3 stalks celery, chopped
  • 2 large onions, chopped
  • 15 pods hot peppers
  • 3 Tbsp. chili powder
  • 1 cup sugar

Directions

  1. for the barbecue sauce,. mix all ingredients but meat well in a large kettle. Simmer 6 to 8 hours, stirring occasionally.

  2. Use the sauce to brush over the ribs as they cook slowly on a charcoal grill 40 to 50 minutes.
