Barbecued Spareribs

Ingredients

  • 2 racks fresh spareribs, about 2 lb. each
  • 2 Tbsp. soy sauce
  • 1/3 cup hoisin sauce
  • 2 Tbsp. pale dry sherry
  • 1/4 tsp. Chinese five-spices powder or garlic powder
  • 1 Tbsp. sugar
  • 1/2 tsp. red food coloring
  • Duck sauce
  • mustard sauce
  • Alternate sauce:
  • 3 Tbsp. soy sauce
  • 2 Tbsp. molasses
  • 2 Tbsp. dry sherry
  • 1/2 tsp. salt
  • 1/4 cup jellied cranberry sauce
  • 1/4 tsp. garlic powder
  • 1/4 tsp. ground allspice
  • 1 Tbsp. sugar or honey
  • 1/2 tsp. red food coloring

Directions

  1. Trim fat and gristle from ribs. Cut off soft bone ends and slash through about 1 1/2 inch between thicker ends of bones for more flavor and even cooking.

  2. Mix next 6 ingredients in large bowl. Brush ribs with the mixture and set aside for at least 1 hour. Pat sparerib pieces on rack in roasting pan containing 2 cups water and roast in preheated 350 degree oven 1/2 hour (do not let ribs touch water). Add more hot water to pan if necessary during roasting. Turn ribs and brush with remaining sauce. roast 1`/2 hour longer, or until done. Cut in strips between bones and serve plain or with sauces.

  3. For alternate sauce: Mix all ingredients and use as substitute for marinade.
