Plank-Grilled Pork Chops with Plum Salsa and Marinated Kale

Ingredients

  • 5-6 firm, but ripe, red or purple plums, pitted and cut into 1/4-inch wedges
  • 1 medium cucumber, peeled, seeded and diced
  • 2 tbsp. finely chopped fresh parsley
  • 3 tbsp. fresh lemon juice, divided use
  • 1 tbsp. plus 1 tsp. honey, divided
  • 1 garlic clove, minced
  • 1 tsp. minced fresh ginger
  • 1 medium serrano pepper, seeded and finely chopped
  • To taste, sea salt and black pepper
  • 6 cups finely chopped kale
  • 2 tbsp. olive oil
  • 1 lb. pork loin, center-cut, boneless chops
  • 2 cedar planks for grilling, soaked in water for 2-3 hours

Directions

  1. In a large bowl, combine the plums, cucumber, parsley, 1 tbsp. lemon juice, 1 tbsp. honey, garlic, ginger, and serrano pepper. Toss to combine. Season to taste with salt and pepper. Set aside.

  2. Place the kale in a large bowl and add the remaining 2 tbsp. lemon juice, 1 tsp honey, and the olive oil. Add a generous pinch of salt and toss well to combine. Set aside.

  3. Season the pork chops generously with salt and pepper. Heat a grill to high heat. Place the planks on the grill, leaving room to sear the pork chops. Place the pork chops on the grill, and sear for 1-2 minutes per side. Transfer the chops to the planks, close the grill and cook for 8-10 minutes or until cooked through. Transfer the pork chops to a platter to rest for 10 minutes before serving.

  4. Serve chops with the plum salsa and a spoonful of the marinated kale.
