Boston Bean Dogs

Ingredients

  • 4 strips thick-sliced bacon, diced
  • 1/4 cup diced white onion
  • 1/2 tsp. minced fresh garlic
  • 2 tbsp. water
  • 3 tbsp. pure maple syrup
  • 2 tbsp. molasses
  • 2 tbsp. cider vinegar
  • 1 tsp. prepared yellow mustard
  • 16 oz. can Navy beans, drained and rinsed
  • 8 hot dogs, grilled
  • 8 hot dog buns, toasted
  • Diced white onion and red bell pepper

Directions

  1. Cook bacon in a saucepan until crisp; transfer to a paper towel-lined plate and pour off all but 1 tbsp. drippings.

  2. Saute 1/4 cup onion and garlic in drippings over medium-high heat until softened.

  3. Deglaze pan with water, scraping up any brown bits, then stir in maple syrup, molasses, vinegar and mustard. Add beans, reduce heat to medium-low and simmer beans until heated through and sauce is syrupy, about 10 minutes.

  4. Serve hot dogs in buns topped with beans, onion and bell pepper.
