Quick-Pickled Vegetables

Ingredients

  • 1/2 cup distilled white vinegar
  • 1/4 cup sugar
  • 1 tsp. kosher salt
  • 1/2 tsp. red pepper flakes
  • 1 English cucumber, thinly sliced
  • 1 cup seeded, diced tomatoes
  • 1/2 cup thinly sliced red onion

Directions

  1. Whisk together vinegar, sugar, salt and pepper flakes in a bowl.

  2. Add cucumber, tomatoes, and red onion; toss to coat. Let veggies stand at least 5 minutes, or chill until ready to serve.
