Grilled Game Hens with Rosemary Paste

Ingredients

  • 2 Cornish game hens (18 oz. each), trimmed
  • 1/4 cup olive oil
  • 2 tbsp. fresh lemon juice
  • 1 tbsp. chopped fresh rosemary
  • 1 tbsp. chopped fresh parsley
  • 2 tbsp. chopped garlic
  • 2 tsp. kosher salt
  • 1 tsp. black pepper

Directions

  1. For the game hens, cut along both sides of backbones; remove and discard. Split hens in half through the breastbone.

  2. For the paste, puree oil, lemon juice, rosemary, parsley, garlic, salt and pepper in a food processor.

  3. Coat game hens with paste; chill at least 1 hour.

  4. Preheat grill to medium to maintain a temp of 450-500. Brush grill grate with oil.

  5. Grill game hens, covered, skin sides up, occasionally brushing with any remaining paste, 10 minutes.

  6. Flip game hens and grill, covered, until a thermometer reaches 165, about 5 minutes more. Carefully transfer game hens to a platter, tent with foil, and let rest 5 minutes.
