Pina Colada with Sweetened Condensed Coconut Milk

Ingredients

  • 15 oz. can full-fat coconut milk
  • 2 tbsp. sugar
  • 2 cups ice cubes
  • 1 1/2 cups frozen pineapple chunks
  • 1 1/2 cups pineapple juice
  • 1 1/2 cups Malibu rum
  • 2 tbsp. fresh lime juice
  • Fresh pineapple wedges

Directions

  1. Heat coconut milk and sugar in a saucepan over medium, whisking until sugar dissolves. Bring coconut milk to a boil, then reduce heat to low, and simmer until it thickens and is reduced to 1 cup, whisking often, about 30 minutes. Let sweetened condensed coconut milk cool to room temp.

  2. Blend ice, frozen pineapple, pineapple juice, rum, lime juice, and sweetened condensed coconut milk in a blender until slushy.

  3. Garnish Pina Coladas with pineapple wedges.
