Ingredients
- 2 sticks softened butter
- 1 1/2 cups granulated sugar
- 1 egg
- 1 1/4 cups AP flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- Zest of two large lemons
- 1 tablespoon lemon
- 1/4 cup lemon sugar for rolling cookies
Directions

Preheat oven to 350 degrees.

Line cookie sheets with parchment paper.

Cream together butter and sugar until light and fluffy. (About 3 minutes)

Add egg.

Mix until well combined.

Stir in flour, baking powder, salt, vanilla, lemon zest, and lemon juice.

Allow to sit for 3 minutes.

Scoop, by tablespoonful.

Form into ball.

Roll in lemon sugar.

Place on cookie sheet.

Bake for about 10 minutes, until slightly browned.
