Spicy Mongolian Beef

Ingredients

  • 1/4 cup olive oil
  • 2 tbsp. rice vinegar
  • 1 tbsp. soy sauce
  • 1 tbsp. sesame oil
  • 2 tsp. minced fresh ginger
  • 1 small garlic clove, minced
  • 1 tsp. sugar
  • Beef:
  • 1 tbsp. soy sauce
  • 2 garlic cloves, minced
  • 2 tsp. sugar
  • 1-2 tsp. red pepper flakes
  • 1 tsp. sesame oil
  • 1 lb. beef top sirloin steak, cut into 1/4-inch. strips
  • 1 tbsp. olive oil
  • Salad:
  • 8 cups torn mixed salad greens
  • 1 cup shredded carrots
  • 1/2 cup thinly sliced cucumber
  • 4 radishes, thinly sliced

Directions

  1. For dressing, whisk together first seven ingredients.

  2. Toss first 6 beef ingredients. Stir-fry in olive oil over medium-high heat until browned, 2-3 minutes. Remove.

  3. Place salad ingredients and beef on four plates. Drizzle with dressing.
