Ingredients

  • 1 beaten egg
  • 3/4 cup soft bread crumbs
  • 1 lb. lean ground beef
  • 1/4 tsp. salt
  • 1/4 tsp. fresh ground pepper

Directions

  1. Combine all ingredients and shape into four 3/4 inch thick patties. Grill over medium coals for 14 to 18 minutes or until no pink remains, turning once. (Or, broil 3 to 4 inches from heat for 12 to 14 minutes.) Serve on buns with desired condiments.

  2. Middle East Burger:

  3. Prepare the Basic Burger mixture, adding 1/4 cup drained, rinsed and coarsely chopped canned chickpeas, 2 Tbsp. chopped fresh parsley and 2 tsp. ground cumin.

  4. Serve in warm pita pocket bread with chopped cucumber, tomato, and tahini (sesame seed paste) or sprinkle with sesame seed.

  5. Korean Kimchee Burger:

  6. Prepare the Basic Burger mixture. In a small mixing bowl combine 2 Tbsp. bottled minced garlic with 2 Tbsp. toasted sesame seeds, crushed. Stir in 4 tsp. soy sauce, 4 tsp. toasted sesame oil and 2 tsp. sugar.

  7. Mix half of the sesame mixture with the meat mixture. Shape mixture into patties. Grill or broil; top each finished burger with the remaining sesame mixture and 2 Tbsp. of coarsely chopped, prepared kimchee. Serve burgers on toasted whole wheat or plain hamburger buns.

  8. French Burgers:

  9. Add 1/4 cup crumbled blue cheese, 2 Tbsp. drained capers, and snipped fresh tarragon (or a small amount of dried tarragon, crushed) to the Basic Burger mixture. Grill or broil, top wit more crumbled blue cheese, if desired, and serve on toasted sliced sourdough bread.

  10. Greek Burger:

  11. To the Basic Burger mixture add 1/4 cup finely chopped pitted Greek olives and 2 Tbsp. snipped fresh oregano or 1 tsp. dried oregano, crushed. After grilling or broiling, top burgers with crumbled feta or herbed feta cheese. Serve in warmed pita rounds.
