Summery Chickpea Salad

Ingredients

  • 1 1/2 cups halved multicolored cherry tomatoes
  • 1 cup canned unsalted chickpeas, drained and rinsed
  • 1 cup cucumber, cut into half-moons
  • 1/3 cup coarsely chopped parsley
  • 1/4 cup red onion, slivered
  • 2 tbsp. olive oil
  • 1 1/2 tbsp. fresh lemon juice
  • 1/2 tsp. black pepper
  • 3/8 tsp. kosher salt

Directions

  1. Combine tomatoes, chickpeas, cucumbers, parsley, red onion, olive oil, lemon juice, salt and pepper. Toss gently to combine.
