Barbecued Cabbage

Ingredients

  • 1 medium head cabbage
  • 1/2 stick butter
  • 1 Tbsp. barbecue spice rub
  • 1/4 cup barbecue sauce, optional

Directions

  1. Remove the core of the cabbage with a sharp paring knife, leaving a hole about 3 inches deep.

  2. Gently loosen cabbage leaves. Sprinkle interior of the cabbage with the barbecue spice rub and spread pats of butter in cavity and between leaves of cabbage.

  3. Wrap the cabbage of heavy-duty foil so all but the core is covered.

  4. Place the cabbage in the center of a cooking grate over medium-hot indirect heat. Cook for about 1 1/2 to 2 hour or until very tender and leaves pull off the core easily. Baste occasionally with the barbecue sauce and butter that collects in the core. Cut into wedges and serve.

  5. This also can be baked in a 350 degree oven. Bake until tender and the leaves pull off like an artichoke.
