Barbecued Chicken Meatballs

Ingredients

  • 1 lb. ground chicken
  • 1/3 cup bread crumbs
  • 1 egg
  • 1 tsp. chili powder
  • 1 small onion, grated and drained
  • 3/4 tsp. smoked paprika
  • Salt
  • 2 Tbsp. unsweetened applesauce
  • 1 cup favorite barbecue sauce

Directions

  1. Heat oven to 375 degrees.

  2. In a mixing bowl, combine chicken, bread crumbs, egg, chili powder, onion, paprika, salt and applesauce and mix well using your hands. Shape mixture into 24 balls. (can be covered and refrigerated for up to 24 hours.)

  3. Roast balls on a rimmed baking sheet for 20 to 25 minutes or until internal temperature reaches 165 degrees.

  4. Transfer cooked balls to a skillet and add barbecue sauce and cook over medium-low heat, stirring frequently until balls are coated in sauce and sauce thickens slightly. Serve immediately or transfer to a slow cooker on warm until ready to serve.

  5. about 24 meatballs

  6. Variation: For Hot Wing Meatballs substitute 1 cup wing sauce for the barbecue sauce.
