Barbecued Eggs (Kai Peank)

The eggs are commonly available from street vendors in Thailand. A charcoal grill will give them a nice smoke flavor.

Ingredients

  • 6 eggs
  • 2 Tbsp. light soy sauce
  • 1/2 tsp. black pepper
  • 1 Tbsp. fish sauce
  • 1 Tbsp. spring onion
  • Wooden skewers for barbecuing
  • Small funnel

Directions

  1. Clean the eggs on the outside. Break a small hole in one end, approximately 3/5 inch in diameter.

  2. Empty the eggs from the shells onto a plate. Don’t worry about breaking the yolk. Mix the eggs with the light soy sauce and fish sauce and black pepper.

  3. Refill the shells with the seasoned egg mixture, using the funnel. Stack the eggs upright and steam for 8 minutes.

  4. Now, poke a wooden skewer clear through the egg so it comes out the other end. You can get 3 eggs on each skewer.

  5. Place the skewered eggs on a grill and barbecue for 10 minutes.

  6. Serve with sweet chili sauce and lettuce.
