Barbecued Individual Meat Loaves

Ingredients

  • 2 lb. ground beef
  • 1 cup quick-cooking oats
  • 3/4 cup bottled barbecue sauce
  • 1 egg
  • 2 Tbsp. bottled Italian salad dressing
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper

Directions

  1. Combine all ingredients in medium bowl. Form into 8 individual meat loaves. Place in 2-quart (12 × 7 inch) glass baking dish.

  2. Microwave for 23 to 25 minutes, on Roast or until meat is well done (about 140 degrees) Let stand 5 minutes before serving.

  3. Variation:

  4. Substitute 1/4 cup cooked rice, 1/4 cup chopped green pepper and 1 tsp. dried parsley flakes for oats and barbecue sauce. Shape into 8 patties; place in a 2 quart (12 × 7 inch) glass baking dish. Microwave for 12 minutes on Roast. Combine 1 can (10 3/4 oz.) condensed beef consommé and 3 Tbsp. cornstarch in medium mixing bowl until smooth. Stir in 1 can (4 oz.) mushroom stems and pieces, undrained, 1/3 cup catsup and 1/4 tsp. leaf basil. Pour over patties and continue cooking for 12 to 14 minutes, on Roast, or until meat is well done. Let attend 5 minutes before serving.
