Basic Chinese Fried Rice

Ingredients

  • 6 cups cooked rice, cold
  • 2 large eggs, beaten with a dash of salt
  • 2 Tbsp. dark soy sauce
  • 1 tsp. cooking wine
  • 2 green onions, chopped fine
  • 1 cup thawed frozen peas
  • 4 Tbsp. peanut oil

Directions

  1. In a hot wok, add a tablespoon of peanut oil. When oil is hot, gently pour eggs into wok and cook on medium high heat for 2 minutes, turn over to cook the other side of eggs. Cook another 2 minutes; remove from wok to cutting board and cut into slivers.

  2. Using medium heat, add 3 Tbsp. peanut oil into wok until smoke begins to rise. Add cooked rice, salt, wine and dark soy sauce. Keep stirring until rice is hot.

  3. Add peas, egg slivers, green onions and any cooked meat of your choice. Stir for another minute, serve hot.
