Basic Cream Puff Paste

Ingredients

  • 1 cup water
  • 1/2 cup butter or margarine
  • 1 tsp. sugar
  • 1/4 tsp salt
  • 1 cup all-purpose flour
  • 4 eggs

Directions

  1. Combine water, butter, sugar and salt in heavy saucepan and bring to boil. Add flour all at once, then beat with wooden spoon over low heat 1 minute, or until mixture leaves sides of pan and does not separate. Remove from heat and continue beating about 2 minutes to cool mixture slightly.

  2. Add eggs one at a time, beating vigorously after each at least 1 minute, or until egg is well incorporated and mixture has a satiny sheen. Paste will be light in color and will hold stiff peaks when spoon is lifted.

  3. Note: Recipe can be halved.
