Basic Pastry

Ingredients

  • 1 cup all-purpose flour
  • 1/2 tsp. salt
  • 1/3 cup plus 1 Tbsp. shortening
  • 3 to 4 drops of yellow food coloring (optional)
  • 2 to 3 Tbsp. cold water

Directions

  1. Combine flour and salt; cut in shortening with pastry blender until mixture resembles coarse meal. Add food coloring to the water if extra color is desired (pastry will not brown in microwave oven). Sprinkle water evenly over flour mixture, and stir with fork until all ingredients are moistened.

  2. Shape dough into a ball, and place on a lightly floured surface; roll dough into circle 2 inches larger than inverted 9-inch pie plate. Fit pastry loosely into pie plate. Trim edges, and fold under to form a standing rim; flute.

  3. Place a piece of heavy-duty plastic wrap over pastry, and cover with dried beans or peas. Gently prick rim of pastry (this will help maintain fluted shape). Microwave at high for 5 1/2 to 7 minutes or until pastry is opaque and bottom is dry.
